I’m a smoothie lover and so are my boys. I have tried a few green monster smoothies and about puked myself. I don’t want so be sucking down something that taste like a salad at 7am.
I saw this recipe on Krysta’s blog, My Life in Food. (You should go there and browse. While drooling. Then cook every recipe she post.) This smoothie has spinach but doesn’t turn out green. Perfecto.
Ingredients:
4 cups baby spinach leaves, loosely packed
2 cups frozen mixed berries or just blueberries works fine
1 banana (she suggest a frozen banana and thats what I used)
1 orange
1 teaspoon vanilla extract (you can add 2 teaspoons if you really love it)
(I also added a splash of orange juice to make it mix easier.)
Mine aren’t as pretty purple as hers, but I am not the chef she is either. And I dumped a bunch of random frozen berries that were left over in my freezer. And they were still delish.

Yummy!! I love a good smoothie.. Wonder if you could substitute vanilla protein powder for the vanilla extract?

wow…spinach huh?!! I loooovvve my smoothies – but never thought veggies would be good. Does it still taste fruity?? Or does the spinach taste really come through?? I need to find more sneaky ways to get veggies in, both for myself & my kiddo!! haha

Molly, its like you read my mind! We've been doing tons of smoothies in the morning lately because we're doing P90X (fun) and I was just thinking this morning, I need to start adding some greens into this since right now I use skim milk, greek yogurt, fruit, and ice.

That looks super good, I'm trying to eat healthy and I'm not a huge breakfast eater unless it's cereal… but this looks like a great solution! Did it taste as good as it looks?

Hmmm… that is probably a good way for me to get in extra veggies, but the color is throwing me off a little. Maybe more raspberries might help give it a better color? I'm going to try it this weekend!
