Spring starts a really exciting season around our household! Thursday was opening day for Major League Baseball and that’s something to be celebrated! We spent the afternoon watching games and the night scratching teams off our march madness brackets and drinking margaritas with our friends. (My whole bracket is done for!)
The boys had a teacher workday on Friday and we really enjoyed the time together. Cooper had earned a reward for good behavior, so I took him for a frappuccino, then followed that with a day out on the lake.
It was sunny and 72, but still not quite warm enough for me to brave the cold water in my wetsuit! I did, however, drive The Hubs while he surfed. I LOVE how the boys all sit backwards and watch him.

We had decided earlier in the week that we were doing a family pizza making night. I made one with Trader Joe’s cauliflower crust and it was surprisingly delicious! It held it’s shape well, even with lots of toppings.
Saturday was opening day for our little league and Callan rocked his first game with a score of 19-9! We had to divide and conquer since Cooper had a game as well, but we were all able to get out for Cooper’s second game of the day.
Sunday was another day of tournaments for Cooper, an hour away from home. The little ones do such a good job being at the field so long! I got this new chair for the season and it’s a total comfort changer. With all the time we spend watching, it may as well be comfortable!
I marinated a london broil overnight on Friday with this marinade recipe and it was delicious! It cooked in about 15 minutes and I paired it with Seeds of Change Brown Rice and Quinoa and green beans for a really quick dinner. It’s always tempting to grab fast food on the way home from a long weekend of baseball, but prepping ahead a bit really helps to keep us on track. Also saves a ton of money!
Do you have any busy night meal go tos? I’d love to try them?
