A copy cat Starbucks sous vide egg bites recipe, without the sous vide equipment!
Before we went away on a couples trip, I meal prepped plenty for the boys to eat while we were gone. I’m a huge stickler for them eating lots of protein in the morning before school! I had recently bought Starbucks sous vide egg bites in the airport and loved them. The consistency was different than any egg bites I’ve ever made, so after researching Starbucks ingredients, I made my own version! They came out better than I expected and I can’t wait to experiment with other add ins. I know that one of the ingredients (ahem, cottage cheese) can be a hit or a total miss for people. I happen to love it, but in this recipe, you wouldn’t even know it’s in there. It’s the key to the fluffiness and adds tons of protein.
This recipe makes 24 egg bites and is perfect to make ahead for busy weekday breakfasts!
Copy Cat Starbucks Sous Vide Egg Bites
Ingredients:
1 cup cottage cheese
1 cup shredded cheese (I used colby jack)
18 eggs
Salt and Pepper
Mix ins of your choice
Instructions:
Preheat oven to 300 degrees.
Combine eggs, cheeses, salt and pepper in a blender. Blend until just combined. Pour into greased muffin tins until 3/4 full. Add in whatever ingredients you’d like! I left some plain, some with ground (cooked) turkey sausage, peppers and spinach. Totally going to try the gruyere and bacon version soon!
Before you cook the bites, fill a ceramic pan with water and place on the lower shelf. This adds some steam to the oven while cooking and helps the bites stay fluffy. Place the muffin tins on a higher rack and bake for 30 minutes. The egg bites will start to pull from the edges when they’re done. Allow to cool before removing from the pan.
You can store these in a ziplock bag in the refrigerator for up to 5 days, or in the freezer if you need to keep them longer. Heat in the microwave at 50% power when you’re ready to eat them.
These are honestly so delicious and while I’ve posted egg bite recipes before, the fluffiness of these makes them a total win! Hope you enjoy these as much and my family and I do!
