A couple weeks ago, I started panicking that Lincoln, baby #3, wasn’t going to be able to go to an Easter egg hunt. Since Spring Break falls over Easter this year and our travel makes us miss both our local hunt and our vacation spot hunt, I had to figure out a solution. With the older 2, I took them to all the events, threw all the parties and they wore matching monogram shirts. The boys are all growing up so fast and I didn’t want to miss what might be Lincoln’s last year caring about an egg hunt! So, I told him to pick a couple friends and we were throwing our own dang party. I set out a spread of food, boiled a bunch of eggs to dye and set the big brothers out to hide eggs inside, since the grounds were still snow covered!
Easter Party and Egg Hunt
I went with a Peter Rabbit garden type of veggie display, which turned out so cute! I lined a wooden bowl with saran wrap, then a layer of lettuce, put a hollowed out purple cabbage in the center with ranch dip and surrounded it with a variety of veggies. Easy clean up and cute presentation!
I used my silicone bunny mold to freeze orange juice in the bunny shape for mimosas for the parents. I have quite the collection of silicone molds now and am surprised by just how often I am able to use them.
I’ve been making Easter egg cake pops for years (hello 2011 blog post!) and they are still a favorite. The boys had a blast helping me make them this year and they were eaten pretty darn quickly. We noticed one of Cooper’s friends cars in the driveway later that day. He had seen my instastories and asked Cooper if he could come over for a cake pop. Haha. I got a kick out of that!
Bunny bait is another one of those things I make every year and it’s so good. I make a big batch and it’s always a hit, no matter what holiday I customize it for.
After a house search for eggs and eating all the candy and snacks in sight, they got settled down to dye eggs. I really overshot this and boiled 36 eggs, so we have a lot to eat this week before we leave for Spring Break!
