Simple, healthy go to lunches that are easy to make. Most can be made in batches to make your week of lunches even easier!
Lunches are my least favorite meal to make. I’m usually doing something, don’t want to be interrupted to cook, can’t decide what to eat and sometimes just end up not eating. I know, I know. Awful! Since we’ve been at home for so long, I had to go back through the archives and meal planning lists to refresh my memory on some things I really like to eat. This week, I’m bringing out some old favorites and am so excited about having healthy go to lunches prepped for me!
Chicken Salad
This recipe is a favorite of mine and uses mashed avocado as the base instead of mayo. I can make a big batch of this and eat it for a few days. I like it in lettuce cups, on rice cakes, or with crackers.
Charcuterie Snack Board
I’m a big snacker and like to eat smaller meals more frequently. I’ve been making charcuterie snack boards for my whole family and they’re a big hit. Also a great way to add in those veggies! Veggies, turkey rolls, cubed cheese, hummus, pretzels; you name it! This is especially good to eat outside in nice weather and not have to clean up afterwards!
Brussel Sprout Salad
What I love about this salad, is that it’s super hearty and can stay in the fridge a few days. The brussel sprouts actually get better in the dressing instead of soggy. You can buy brussel sprouts already shaved in the produce section, or chop them yourself.
Mexican Quinoa Salad
This is a delicious dish that was one of my first recipes I shared here on the blog! I’ve made it with feta cheese and cheddar and you can totally play around with the pepper/onion varieties. This is a great dish to make a big batch of and eat all week.
BLAT Wraps
These are easy to throw together, especially if you prep ahead of time! Make up a big batch of bacon (hide it from your kids!) then this easy and delicious lunch is ready in a flash. Line the lettuce pieces with avocado or guacamole, layer with sliced turkey, a piece of bacon and cherry tomatoes.
