I know we’re all trying to do our best with eating healthy as the new year kicks off! I have a lot of recipes that I want to share with you in the next couple of weeks, but I’m kicking it off with kale salad!
I have been making this kale salad, inspired by one of my favorite restaurants, for the last few weeks. My husband turned his nose up, but then ate it and said, “you actually made kale taste good!” My teenager has been taking it to lunch at school and it’s part of my 14 day meal plan that I made to start the year. It’s delicious with a piece of grilled chicken or fish on top, too!
Kale Salad
8 oz kale, chopped
1/4 cup olive oil
1/8 cup lemon juice
1/2 cup shredded Parmesan cheese
1/2 Tbsp crushed red pepper
Salt and pepper to taste
Panko bread crumbs
Chop kale finely and remove any stalks. Place in a bowl and drizzle with olive oil and lemon juice. Massage the kale with your hands to start the softening process. This part is really important, so get in there! Add cheese and seasonings, then toss well. Cover the salad and store in the refrigerator. It gets better with time, so don’t be afraid to use it as your lunch for several days!
Sprinkle with bread crumbs just before serving. This is great with grilled chicken or fish on top!
