These McGriddle Muffins are a simple meal prep that is packed with protein and perfect for a fast breakfast for the whole family!
I love that these McGriddle Muffins give the delicious flavor of a classic McGriddle, without the gunk! These are packed with protein (14.5 grams/muffin) and are the best meal prep to make school mornings so much easier!
McGriddle Muffins
Ingredients:
2 cups protein pancake mix (I use Kodiak)
1 1/2 cups milk
1/4 cup maple syrup
1 cup shredded cheddar cheese
1 lb sausage, browned (I use turkey sausage for lower fat)
Instructions:
Preheat oven to 400 degrees. Mix pancake mix, milk and maple syrup. Fold in cheese and cooked sausage. Divide evenly into a 12 muffin pan. Silicone works best!
Bake at 400 for 14 minutes or until browned and cooked through. Allow to cool before popping out. Store in the refrigerator and reheat for 20-30 seconds in the morning!
