Happy Monday! I meal planned for this week, but since The Hubs and I are traveling and I’m leaving the cooking to my in-laws, I decided to share some recent recipe favorites instead! Over Christmas break, I added more than my normal amount of new recipes. Some were absolute winners that are added into the family favorites category! Here are some of our new recent recipe favorites!
Tuscan Chicken Mac-N-Cheese
10/10 from the whole family! I got sun-dried tomato halves and cut them in half so they weren’t too big and the boys could pick around them. Other than their pickiness about those, the flavors in this dish are incredible and it made a great dish for a busy night of sports. I made it a bit more simple by mixing the chicken into the pasta and keeping it all warm on the stove until everyone got home.
Ginger Glazed Chicken Ramen
This is the ultimate comfort food recipe! We actually had this twice in the last couple of weeks, since everyone loved it so much. Lincoln said this is the best chicken I’ve ever made! I used Lotus Foods rice ramen that you can get in the big package at Costco and beef bone broth to add even more protein and nutrients.
Sesame Chicken Cabbage Crunch Salad
I loved this salad! There is no lettuce, only cabbage as the base, which made it super hearty and great for leftovers. I ate it for lunch for a couple days after the dinner, too. I left the jalapeños off so it wasn’t too spicy for the kids and everyone who wanted them added them on their own.
Greek Chicken Meatballs
Bowl are the perfect family meal here. You have your meat and carbs, then people can top with whatever they like. It really limits the complaints! These greek chicken (I used turkey because that’s what I had) meatballs have amazing flavor and got great reviews from the family. With rice and all the greek toppings, this was a delicious and a bit more unique meal than I usually cook. I did bake the meatballs to make it easier and they cooked great on my silicone baking sheets.
Rosemary Pear Stuffed Pork
This is a “fancier” dinner, but it honestly wasn’t difficult and was so delicious. I used goat cheese instead of blue cheese for our families preference. This would be a great dish for a dinner party, Valentine’s Day, or just to impress your family!
Wedge Salad Board
We made this over Christmas break and everyone loved it! Another one that works well for our family since everyone can add what they want on top. I’ve found that there’s something about doing it yourself that makes little ones much happier eating it! I sliced iceberg lettuce into wedges, then had bowls of cherry tomatoes, crumbled bacon, onion straws, blue cheese and croutons. Make this a full meal by adding in some grilled chicken!
