Back in the day, when I was in nursing school, I paid the bills by whipping up fancy drinks at Starbucks. One of my favorite drinks then, and still to this day, is the Caramel Apple Cider.
It’s now known as Caramel Apple Spice, but is still the same delicious drink, made with apple juice, cinnamon syrup, whipped cream and caramel drizzle. I would often recommend this drink to people who weren’t coffee drinkers, or who just wanted something different during the cold New York fall and winter. It’s also my go to now, when I find myself at Target in the afternoon and don’t want any more caffeine. Sold yet? Good.
Now that I’m old enough for the liquor store, I find it fun to use my barista knowledge in making cocktails. This one, it’s just perfect for fall. Simple to make and topped with caramel. There is nothing bad topped with caramel, FYI.
Caramel Apple Spice Cocktail
8oz apple juice
1 1/2 oz rum (I use light, but I bet dark would be good, too!)
1/2 oz cinnamon schnapps
Whipped cream
Caramel drizzle (I use ice cream topping in a squirt bottle)
In the microwave or stovetop, heat apple juice to 160 degrees, or desired temperature. Stir in rum and cinnamon schnapps. Top with whipped cream and drizzle with caramel. Add a cinnamon stick if you’re really trying to impress people. Snuggle by the fire and enjoy!
