I’m starting a series over on Instagram dedicated to making school mornings easier. I am in a funk, let me tell you, and I need to motivate myself out of it! Kicking off this series is one easy breakfast that I started making in our house. The southern girl in me loves a good biscuit, so I decided to pack them with some protein and add greek yogurt, sausage and cheese. These are easy to make a big batch of them, and also easy to grab and go out the door. These sausage cheese biscuits would be great for holiday company, too!
Sausage Cheese Biscuits
3 c. Flour
1 Tbsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Salt
8 Tbsp Butter, very cold
1lb Sausage, browned and drained (I use turkey sausage)
1 c. Cheese, shredded
1 c. Greek Yogurt
Directions
Preheat oven to 425 degrees. Combine dry ingredients in a large bowl. Cut butter into pats and cut into dry mixture. You can use a pastry cutter or 2 knives and cut until mixture is crumbly. Fold in sausage and cheese. Lastly, add greek yogurt and fold until mixture is just moistened. Dump the mixture out onto a floured counter and press together until combined. It will still be crumbly, but do not over mix! This will help keep your biscuits moist. Cut mixture into 18-20 portions. Roll into balls, flatten slightly and place on a parchment lined pan. Bake 18-20 minutes or until lightly golden brown. Store in the refrigerator and heat for 15-20 seconds before serving.
These biscuits contain 8 grams of protein each and are a great way to get some protein in your kids on a busy school morning! Enjoy!
