This has quickly become one of my go-to summer dishes. I love bringing it to parties, because it’s so pretty and delicious!
Recipe:
1 Pineapple
1 purple onion, diced
1 red bell pepper, diced
3 Tbsp Lime Juice
1/4 cup Cilantro, chopped
1 tsp Salt
Directions:
Cut pineapple in half lengthwise, being careful to not cut off the top. Using a knife, cut lentghwise along the sides of the core, without cutting through the skin. Cut cross sections in the pineapple skin, still not cutting through the skin. Using a spoon, scoop out the pineapple and place in a separate bowl. You should get chunks from the lines you cut and will only have to dice it up a bit smaller. After removing all the pineapple, cut the core out with a knife. Repeat with other half.
Add remaining ingredients to bowl of pineapple and mix well. Place pineapple bowls on a platter and fill with salsa. Serve with tortilla chips or over grilled fish.
If you look close enough, you can see that those pineapples are happily sitting on Santa’s sleigh tray. I brought this to a party and managed to leave my dish, so until I figure out what neighbor of mine has it, Christmas in the summer it is!
