If you’re not licking cheese sauce off your fingers during a playoff game, I’m just not sure you’re living your best life.
People often as me how I stay in shape when I love to eat junk. It’s simple really. I focus on very healthy food 80% of the time and workout hard. And that’s really all because I want to eat everything. I love food. Creating recipes, cooking meals for my family and trying all sorts of new foods is something I really enjoy and I’m not willing to give it up. I’m a firm believer that depriving yourself will ruin any forward progress. At least that’s the case for me. Alternately, I’m careful and really enjoy the things I choose to splurge on. Like these Tatertot Nachos.
With all the basketball playoff games happening, you’re bound to have guests or be guests. I promise no one will complain if you show up with these!
Tatertot Nachos Recipe
1 bag frozen Tatertots, cooked according to package directions (best if they’re cooked an extra minute or 2 so they hold up better)
1 can black beans
1/2 purple onion, diced
1 package fully cooked bacon, crumbled, or 1 package cooked according to package directions
1/2 jar sliced jalapeños
8 oz Velveeta cheese
1/2 can Rotel tomatoes
Instructions
While cooking tatertots according to package directions, melt Velveeta cheese in a saucepan over low heat, stirring frequently. Once melted, add in Rotel tomatoes, stirring until heated through and mixed well. Place cooked tatertots on serving plate. Sprinkle black beans, onion, bacon and jalapeños over the top. Drizzle with cheese sauce.
Eat some before you serve them, because they’ll be gone in a split second!
