I posted my Costco haul on Instagram last week and lots of questions came in about what I’m making with the things I bought! I guess I’m due to share this follow up on what I prepped and cooked last week. Full disclosure that I did make a second trip to Costco because my kids are savage eaters of all the things!
Meal Prep
When I got home from the store, these are the things I went ahead and prepped to make my life a bit easier during the week!
Pickled Onions
I love these to add to salads or wraps! They elevate your food to restaurant status and this recipe from A Healthy Slice is super easy.
McGriddle Muffins
The easiest, most tasty breakfast meal prep that my boys devoured in a matter of 2 mornings! These are PACKED with protein and all my boys loved them.
Breakfast Casserole
I make this nearly every week and switch up the veggies added. This week, I did spinach and peppers, but you can really use whatever you like.
Oatmeal Muffins
The Hubs told me he wanted to eat more oatmeal, so I made these up as an afternoon snack. The recipe calls for a sheet pan, but I made them in a silicone muffin pan for an easier grab on the go option.
Dinners
I made some go-to meals and threw in a new one! Everything was easy for a busy week, though.
Crockpot Chicken Nachos
This is a favorite to make because it’s versatile and easy. The recipe calls for taco seasoning, but you can skip that to use it other ways. I did a plain batch and sprinkled seasoning over the chicken I put on nachos! This is a family favorite for after basketball games. Chips, the shredded chicken, cheese and whatever toppings you like. Bake in the oven for about 10 minutes and you’re set! I even line the sheetpan with foil so it’s even a simple clean up. The rest of the chicken can be used for chicken salad, or in another recipe!
Chicken Meatballs with Pineapple Coconut Rice
This is a family favorite recipe that’s always a hit! I made it even easier this week by using the Amylu Teriyaki Pineapple Meatballs from Costco. I just skip to step 3 & 4 in the recipe and throw it all in 1 big pot. I have made the meatballs in the recipe many times and they’re so good and easy to make ahead as well.
Blackstone Garlic Butter Steak Bites
My boys love steak and 3lbs of this was gone in a flash. I chopped up some potatoes and onions that The Hubs cooked on the Blackstone with the steak. Inside I sauteed some spinach with garlic and shredded parmesan and boiled carrots and tossed with butter and cilantro. A “fancy” meal for us that is still so simple.
Mahi Mahi with Parmesan Rice
This is my favorite way to cook fish and it can be used for really all white fish. I use regular italian seasoning and all greek yogurt instead of mayo. It’s cooked in the oven and easy to set and go. This Chicken Scampi recipe is one I make often, but I just did the parmesan rice portion. It turns out a bit risotto like and is delicious.
Crockpot Buffalo Chicken Chili
My kids are not soup or chili fans, which bums me out since I love them! But friends of ours told me their whole family loves this buffalo chicken chili and I had to try it. Y’all! They liked it! I went heavy on the chicken (and used shredded instead of ground) to make it heartier and it was so, so good!
Breakfast Oatmeal
Not a dinner, but I have made this breakfast a few times lately and it is so cozy and nourishing in the winter. It’s super filling, has lots of protein and comes together in less than 5 minutes to get you out the door quickly.
There you have it! The random things I cooked this week! I didn’t realize I would have this many request from my reel, but maybe it should be a more regular thing!
