These BBQ chicken stuffed potatoes are an easy, weeknight meal that is customizable for the whole family!

My family all raved about this dish the first time I made it, so it is now into the regular rotation. The teenagers loved taking the leftovers to school lunch, so I was glad that I had some smaller potatoes to use up as those fit well into their thermos!
BBQ Chicken Stuffed Potatoes
Ingredients:
- 6 large potatoes, sweet or gold, or smaller ones, if desired
- 2 lbs chicken breasts
- 1 cup BBQ sauce
- 1/2 purple onion, diced
- 1.5 cups shredded cheddar cheese
- 1/2 cup chopped green onions
Instructions:

Clean and dry potatoes. Place on a baking sheet and poke with a fork. Drizzle with olive oil and salt, then bake at 400 for 45 minutes, or until skin is crispy and you can easily pierce with a fork. You could also speed this step up by microwaving your potatoes.
While the potatoes are baking, boil your chicken breasts for 20 minutes or until cooked through. Drain and shred. I use my hand mixer to make this process so easy! Add the BBQ sauce and half of the purple onion to the chicken and set aside.
When the potatoes are slightly cooled, slice them lengthwise. Gently scrape the potato and push towards the edges, creating a bowl for your chicken mixture. Sprinkle with salt and pepper, if desired. Pile the chicken mixture into the potatoes and sprinkle with cheese. Place back in the oven for about 5 minutes to melt the cheese. Drizzle with more BBQ sauce and sliced onions.

Notes: This works great for pickier family members! I left some of the chicken plain and only put cheese on a few of the smaller potatoes. You can also put plain chicken in the potatoes and sprinkle the cheese on top. A great way to make an easy meal work for the whole family! This also works amazingly well with my make ahead meat meal plan!
