Don’t say I didn’t warn you, but these things are delicious. And outside of my cheating, packaged crust, not too bad for you either.
You can whip them together and have them out for your guest in 30 minutes. And they only sound like they were a lot of work. I served these for the hubs poker night last week and apparently, they were a hit.
Ingredients:
1 can of thin pizza crust
2 small purple onions, thinly sliced
2 pears, sliced
4 oz goat cheese crumbles
4 oz mozzarella cheese, shredded
2 Tbsp Olive Oil
Unroll your crust and slice into 2″ squares with a pizza cutter. Place on a greased baking sheet and bake at 400 for 5 minutes. Set aside. This can be done an hour or so before you actually serve them, since you will be heating them back up with the toppings.
In a skillet, sauté the onion in the olive oil until translucent, about 5 minutes. Add pear and just heat through. Don’t cook too long, because the pear will start to mush.
With prepared crust on a cookie sheet, place spoonful of onion mixture on top. Mix cheeses together and sprinkle over onion mixture.
Cook at 350 for 5-7 minutes, or until cheese start to melt. Serve warm.
I’ve also made this as a whole pizza. Just use a thicker crust because the toppings get heavy.
