Pine nuts and garlic are sautéed and mixed into the couscous.
Add in your spinach, feta and some lemon juice and you’re ready to serve it! That easy.
Recipe:
10 oz box couscous (I usually use 1 cup)
1 Tbsp olive oil
2 cloves garlic, thinly sliced
1/2 cup pine nuts
3 cups baby spinach
1/2 cup feta cheese
2 Tbsp lemon juice
Cook couscous according to package directions. Heat olive oil in pan. Cook garlic and pine nuts for 2 minutes. Fold into cooked couscous along with spinach, feta and lemon juice.
It takes me less than 15 minutes to get this meal on the table.

I get emeals clean eating menus as well and I have yet to make anything. I need to change that. This looks really good and pretty easy so I'll have to try it. I love feta so anything w/ that in it must be good.
