Many of us are in the swing of spring sports, end of the school year shenanigans and general malaise over cooking dinner. Am I right?! I really try to stick to a meal plan and cook most nights of the week, but I need easy dinners. Here are some that we have had lately (and some multiple times!) that are definitely worth sharing with you. Hope this gives you a few ideas for easy dinners in your house!
Easy Dinner Meal Ideas
Crispy Chicken Tacos – These are weeknight perfection! I made them with chicken and have also made them with the precooked carnitas from Costco. Both ways are simple and delicious!
Lemon Butter Spinach Artichoke Chicken – I loved this meal and I didn’t even have the artichokes! I ended up putting it all in a pyrex and then served it with roasted potatoes.
Korean Steak Bites – These can be made in the air fryer or stovetop and come together in about 20 minutes! I served with rice and green beans, but these would also be great with cauliflower rice if you’re going low carb.
Baked Feta, Chicken and Quinoa – This one doesn’t look amazing, but it really was so good! I think you could do it with any vegetable you’d like.
Protein Packed Hamburger Helper – I shared this meal not long ago, but it’s truly been a great one for busy weeknight meals!
