One of these days I’ll get good at getting this meal plan out before the beginning of the month! But so many of you have told me how much you love me posting these, so here is October!
Real quick before the menu, here is how I go about my Monthly Meal Planning, even though what we actually eat has changed quite a bit. Here is my DIY Menu Board that I use to keep everything organized. I use Pinterest a ton, because there is so much inspiration and I try to stick in several new recipes a month. If you want to look back at other months, here is my June meal plan and September meal plan.
This month, we are traveling the last week, so I don’t have meals planned during that time. I do have several new meals that I’m excited to try this month, as well as the addition of some warm weather meals. Bring on the soups! I am currently LOVING sheetspan meals, because they’re a mom’s dream come true. Very little to clean, very little to prep and you don’t have to stand in the kitchen stirring. I also realize that I need to diversify my veggies a bit. I tend to make green beans all the time, because I love them and so do all the boys. Next month, I’m going to try some new things! I also need to get better about taking pictures of our regular meals. I would much rather see what a meal looks like before I make it, so I’m sure y’all would too!

10/3: Tacos (The boys have classic shells and The Hubs and I eat a taco salad without cheese)
10/4: Chicken Piccata, brown rice, salad
10/5: Sweet Potato Chili
10/6: *Pesto Chicken, cubed potatoes, green beans
10/7: {Birthday party food}
10/8: Shrimp Boil (nitrate free hot sausage, wild shrimp, corn on the cob and potatoes with Old Bay Seasoning)
10/9: *Pineapple Firecracker Chicken
10/10: Burgers & Hot Dogs (We typically do lettuce buns, or eat the burger on a salad), homemade fries
10/11: Sheetpan Fajita Bowls
10/12: Buffalo Chicken Casserole, green beans
10/13: *Salmon Cakes, salad
10/14: {out for a party}
10/15: Coconut Lime Chicken, brown rice, steamed broccoli
10/16: *Chicken Sausage Sweet Potato Bake
10/17: *Fish Taco Bowls
10/18: Sheetpan Cashew Chicken (I skip the hoisin sauce and replace the soy with coconut aminos)
10/19: Meatloaf, Brussel Sprouts, mashed potatoes (I made my mashed potatoes with coconut milk and ghee)
10/20: Zuppa Toscana
10/21: Chili Dijon Chicken (this recipe uses pork, but I use whole chicken breasts and skip the brining step.)
10/22: Mexican Meatball Soup
10/23: Chicken Marsala (I use the recipe on the back of the marsala wine bottle and add peppers and onions), brown rice
10/24: Leftovers
Breakfasts: Sweet Potato Waffle Breakfast Sandwich, Prosciutto Egg Bake, Turkey and Egg Breakfast Casserole
Lunch Options: Superfood Salad, Brussel Sprout Salad
Sometimes, my meals get swapped around. If anyone looks at the menu and would just rather have something else for later in the week, I’ll often do it. Just as long as I haven’t started cooking anything! My friend just made this Pumpkin Chicken Chili and raved about it, so I might sneak it in if we get a cool day! Today is gloomy and drizzling and I could really go for a soup!

Ok, I have 2 almost 4 year olds and they don’t like spicy. I like a little heat, but I also don’t want to be making 2 dishes. I’m dying to try the Sweet Potato Chilli….do you adjust anything to make it less spicy for your kiddos?

I just made the buffalo chicken casserole and it was much to spicy. I didn’t add the suggested amount of hot sauce either. I knew 5 sweet potatoes would be way to much so I just did 2 and it was plenty. Any suggestions on how to tone it down quite a bit?

If you did just 2 sweet potatoes, you should cut the sauces in 1/3rds or so. Is that how much you put in? It is a hot sauce…maybe just try a few tablespoons of it instead and amp up the garlic flavor a bit!
