My pumpkin roll recipe is one of the top posts that Stilettos and Diapers has! It is beautiful, not difficult and a very impressive dessert to bring to an event. I wanted to put a Christmas spin on it and decided to give a red velvet roll cake a try for our recent Christmas party. It turned out so pretty and I’m glad I decided to make it. This would be a great dessert for Christmas and is easy to transport.
Red Velvet Roll Cake
For the cake:
1 cup all purpose flour
3 tbsp unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
3 Tbsp milk
1 tsp vanilla extract
1 tsp white vinegar
3 Tbsp vegetable or avocado oil
3/4 cup granulated sugar
4 eggs
2 Tbsp red food coloring
For the filling:
2 8 oz package cream cheese, room temp
1/2 cup butter, room temp
2 tsp vanilla extract
2 cup powdered sugar
Instructions
First, make the cake. Beat eggs and sugar in a stand mixer for 2 minutes. Add all other ingredients until well mixed and divide onto 2 silpat (or parchment) lined baking sheets. Bake at 350 for 15 minutes or until done. While cooking, make the filling.
Beat butter and cream cheese. Add powdered sugar and vanilla until combined.
Once cakes are done, roll immediately with silpat sheet and let cool for 20 minutes. Unroll, spread with filling, then roll again without the silpat. Wrap in plastic and chill until ready to serve. Slice into 1/2” slices and sprinkle with powdered sugar.
