My meal plans either get groans or massive raves around here. I like to poll the family on the weekend while I’m meal planning and get something everyone likes for the week. A couple weeks ago, I made a meal plan that all 3 of my boys dubbed an “elite” weekday menu and it deserves a spot on the blog. 5 days with no complaints? Let’s go!
These are all delicious, relatively simple and high in protein. Let me know if you try any of these!
Hot Honey Chicken, Caesar Salad
This is one of my family’s favorite meals that goes on the menu every couple of weeks. I leave a couple of the chicken pieces with no sauce for the one family member that doesn’t like too much spice. I have also been making The Peachie Spoon’s creamy caesar dressing for a pack of protein!
Homemade Crunchwrap Supreme
We all love these and they are easy to prep some of the ingredients ahead. I will cook the meat and chop lettuce and tomato earlier in the day so these come together quickly after sports. I’m perfecting my cottage cheese queso I’ve been using in place of the nacho cheese sauce for a bit more protein.
Bang Bang Salmon, Rice, Green Beans
This is a simple recipe that we love. I like to add a fish option in each week and salmon is our favorite. The bang bang sauce really adds great moisture and flavor! I usually sauté my dry rice in butter until brown and then add a mix of water and chicken broth to cook. It’s so good this way!
Baked Crispy Chicken Sandwich
Y’all. These are amazing. Chick-fil-A made healthier and so good! These have a high protein greek yogurt sauce and are really good for a weeknight meal.
Smashburgers, Fries, Raw Veggies
You don’t really need a recipe for these, but they are just a fun staple at our house! We cook them on the blackstone and I love that it doesn’t make the house smell! The boys eat these in a bun and I go for a burger bowl with all the toppings!
