These 5 weeknight dinners chosen by teens are sure to make the whole family happy, while coming together quickly on a busy night!
Last week, Callan sent me an Instagram reel with a few meals he wanted to try. I said if you make a 5 weeknight dinner meal plan, I will cook whatever you choose. He did it for me and we had a delicious and easy week of meals! I highly encourage you to get your kids involved in the meal planning, be it on Instagram or Pinterest. They are so much more likely to enjoy the food when they have a say and it takes the “what’s for dinner?” off my plate!
Crispy Chicken Caesar Sandwiches
This was the favorite of the week overall and absolutely delicious. The recipe calls for prepared chicken patties, but I just cut my chicken thin, dipped in egg then panko bread crumbs and cooked in hot olive oil. They turned out amazing!

Black Pepper Beef Noodles
This dish was bursting with flavor and different than meals I normally make. Marinating the beef ahead was key because I find beef cooked like this is sometimes tough, but it was not in this recipe at all. I couldn’t find the noodles it called for so I just used regular spaghetti and that worked just fine. It also made for great leftovers.

Chicken Scampi with Garlic Parmesan Rice
This is a staple meal in our house and one that I actually make quite often. It is very flavorful with the rice being cooked with parmesan, wine and chicken broth. I made green beans on the side, but have also done sauteed spinach or brussel sprouts.

Loaded Potato Big Mac Bowls
I love a bowl dinner because everyone can add whatever toppings they like = less complaints! This one made the whole family happy and the crispy potatoes were so delicious! I made the sauce with greek yogurt instead of mayo so I wouldn’t feel bad about a generous drizzle.

Street Corn Chicken
I shared this recipe a couple weeks ago and it has become one of our family favorites! Has a lot of flavor, yet is so easy to make. A perfect weeknight meal!
