Here are 5 Weeknight Dinners I Made This Week that were loved by my family of 5, came together quickly and are going to be repeated!
This week, I went with a couple old faithful recipes that are tried and true. I love having my kids help pick the menu, using Instagram or Pinterest to find meals! I have them ready to choose the entire week again next week!

Salmon Bowls
I made these a couple weeks ago with chicken and they were an absolute hit! I love a bowl that can be customized so every family member gets exactly what they want. This one is so easy to prep ahead and everyone voted that the salmon was even better than the chicken! I will be making both again.

Cowboy Butter Chicken Pasta
I have made versions of this dish before but this was a great recipe that was a bit lighter. I saved some of the pasta water for reheating leftovers the next day and that worked perfectly. My chicken didn’t sear up quite like the picture, but it tasted amazing!

Smash Burgers
I love a Blackstone meal, mostly because my hubby cooks it! 🙂 I did all the prep and cooked some packaged waffle fries, so this was a super easy dinner that everyone loves. My favorite part is serving them in these paper lined trays. I got them for Summer lunches by the pool, but they are amazing for burgers, sandwiches or snack plates!

Hamburger Helper
This is an awesome meal that has so much protein and is a throwback to the Hamburger Helper of our childhood. I usually use protein pasta in this one as well and the boys eat up the leftovers for school lunches. It does have blended cottage cheese in it to give it really good creaminess and trust me – your family won’t know. I usually blend the entire tub of cottage cheese when I buy it and it’s easy to have on hand to add to pasta dishes! This one looks way prettier with fresh parsley, but I didn’t have any. It still tasted delicious and is the perfect comfort food that is still good for you.

BBQ Chicken Stuffed Potatoes
Another super easy one that you can use the stove or crockpot for. This week I used the stove because I didn’t plan ahead, but I do like to cook the chicken in the crockpot. Either way, shred the cooked chicken with your hand mixer for the fastest and easiest way! I do a mix of sweet and regular potatoes to make everyone happy, then top half of them and leave the other with just chicken and cheese. It’s easy to customize to what your family likes. My boys like Kinder’s Hot Honey BBQ drizzle on top, too.
